The seasonal pomegranate turns almost any salad from ordinary to extraordinary,
perfect for the holiday festivities.
Organic Ingredients:
Tender baby greens of your choosing – add escarole or arugula for some extra pizzaz
Fresh herb(s) of choice – featured here is garden grown cilantro
Pomegranate seeds from one ripe pomegranate
Avocado
Calamansi lime (may substitute lemon or lime)
Directions:
Rinse and spin all fresh greens.
Gently cut or tear into smaller pieces (if applicable).
Place on plate(s).
Top with pomegranate seeds (click here to learn how to easily retrieve the seeds).
Slice fresh ripe avocado over top.
Add calamasi lime as a dressing and/or as a splash of color
(you might add any orange fruit such as tangerines, persimmons or papaya).
Tip: Serve chilled.
