Broccoli even outweighs an orange for its vitamin C content with nearly five times as much in a single raw serving while fresh raw spinach and oranges are tied.
If you thought carrots were the best source of vitamin A, you may be surprised to learn both sweet potatoes and spinach win that race while romaine lettuce is a good contender and provides a great source of vitamin K.
Now if its calcium you are after, the most easily absorbed sources come from dark leafy green vegetables that are also high in vitamin K, potassium, magnesium and a host of other vital minerals, all integral to the absorption of calcium. Contrary to popular belief, milk is not the best source of calcium. In fact, that is why its fortified with calcium because in its natural state, it is deficient. Even being fortified, milk isn’t the best conveyor for calcium absorption so labels are wildly misleading.
Next time someone asks you, “What’s the best source of potassium?”, what’s your answer? Clue – its not a banana. 🙂 Or “What is the best source of vitamin C?” It’s not an orange. Or “What’s the best source of vitamin A?” Its not a carrot. “What’s the best source of calcium?” One more clue, its not milk or cheese or any dairy products.
