Organic Raw Ingredients:
3 – 4 frozen peeled chopped ripe bananas
1/2 cup frozen peeled chopped pumpkin
3 pitted medjool dates
2 t. pumpkin spice (optional)
1/2 t. cinnamon or to taste
Garnish with:
1/8 cup chopped raw pecans (dehydrated) for topping
a dash of nutmeg
Directions:
Place chopped banana chunks in a high speed blender like a VitaMix.
Add dates and pumpkin spice and/or cinnamon.
Blend until smooth.
Scoop into chilled serving bowls.
Top with a dash of nutmeg and a sprinkle of chopped pecans.
Prep time: 5 minutes
Yields: 2 servings
Tips:
Each Autumn, I purchase extra pumpkin to be used for recipes throughout the year. I process the pumpkin by peeling, deseeding and quartering it and then chopping it in to 1” chunks. I place the chopped pumpkin pieces into freezer zip lock bags for use at another time. Stored in the freezer, raw pumpkin will stay fresh for months.
When my bananas get extra ripe, I peel and freeze those in freezer ziplock bags, four to a bag. They keep in the freezer well and are easy enough to break apart.
