Raw Cauliflower Taboule
Inspired by traditional taboule, this grain-free raw chopped salad is an easy healthful meal. Not one big to follow recipes or pay attention to quantities, I have done my best to provide you with my list of wholesome ingredients. I make this frequently and in all honesty it is slightly different every time depending on what I have in supply. Use organic ingredients wherever possible for a fresher and more nutritious delicious meal.
Taboule Salad:
5 cauliflower florets – minced with knife or use a mini- food processor to make in to rice
2 vine ripened tomatoes – chopped
1 medium to large cucumber chopped
4 sticks of celery – chopped
1 large bunch of cilantro or parsley – minced – your choice or both
1/8 cup raw hemp seeds (optional – omit for low fat version)
Dress with the juice of 1 lime or 1/2 lemon.
For a refreshing variation, add
1 carrot – chopped and/or
1 small chopped apple (optional – for a sweet flair)
Tahini dressing (optional):
1/2 – 1 teaspoon raw tahini
1 wedge of lemon
1 small garlic clove (optional)
ground black pepper to taste
3 T purified water – add more as needed and blend to desired consistency
(using VitaMixer or mini food processor)
You might toss in your favorite salsa or dressing or give one of my favorites a try:
orange cashew dressing.
Mix all together and enjoy!
A fresh easy meal that is sure to energize your spirit and enliven your body.

Servings: 1 large meal or serve as a refreshing side dish
