Berry Bonanza
With tender leafy greens currently a rarity due to COVID-19, I am discovering more fun with my daily smoothies. Once green and slightly brown due to the addition of nutrient rich spinach, my smoothies are now “berry bright” in contrast. To substitute for some of the lost minerals in the absence of tender baby greens, I have been adding celery as an alternative. A great addition with no compromise to color, celery is an excellent source for fiber helping regulate the uptake of fruit sugar and also for sodium to help maintain a healthful sodium potassium ratio.
Ingredients (organic whenever possible):
8 – 12 ripe bananas – fresh or recently frozen is best and then chunked
3 tangerines – peeled
1/2 cup berries – your choice or a combination of berries – fresh is best or frozen is fine too
1/2 lemon – peeled and halved
3 sticks of celery – chopped
1/2 teaspoon ground vanilla powder (optional – for a fun twist)
1 dozen ice cubes if the bananas are not frozen (VitaMix is a high power blender and if the temperature is not regulated by adding frozen fruit and/or ice, your fruit smoothie can become warm – not quite as tasty as a cool one)
Directions:
Place everything in the VitaMix and blend until smooth. There is nothing like a VitaMix to put the smooth in ‘smoothie’.
Serves:
While this makes a full VitaMix of goodness you may choose to adjust the volume accordingly. I enjoy one generous glass in the early morning and take two large mason jars with me to enjoy up through lunch time.
