If you enjoy cocoa or coconut,
you are bound to love these blissful balls for any occasion.
Inspired by a dear friend who prepared these for a luncheon, I am thrilled with the ease and versatility of this recipe.
Organic Raw Ingredients:
1/2 cup nuts (your choice—dehydrated)
2 cups medjool dates (pressed into measuring cup)
4 T. cocoa powder
1 cup shredded dehydrated coconut
Directions:
Place nuts in a food processor with an S-blade. Blend until small to medium pieces.
Add cocoa powder to the nuts in the food processor.
Add dates, evenly spread the dates around in the food processor or they will clump.
Blend until well mixed.
Form into small balls.
Pour the coconut into a small bowl.
Roll each date ball in the coconut until well coated.
Place on a serving plate or place balls between wax paper to be stored in a sealed container.
Will keep in the refrigerator for up to six months and in the freezer for up to a year.
Depending on the humidity and temperature, you can also store at room temperature.
Prep time: 30 – 40 minutes
Yields: 2 – 3 dozen depending on size of balls.
Tips and Variations:
This easy to make recipe is so much fun to experiment with different nuts and flavors.
To save on time, you might roll larger balls.
Omit the coconut for a lower fat alternative.
Roll in finely ground nuts in lieu of coconut.
For mint flavor, add 1/8 t – 1/4 t peppermint essential oil.
For vanilla flavor, add 1/4 t. – 1/2 t. fresh ground vanilla powder.
Other flavors might include a smidgen of cayenne.
