May your spirit be bright and your heart light.
Halloween seems to be the kick off event to a season of joy and thanksgiving with the holidays ahead. While it may have taken a detour from its original intent, for me it remains a day not to celebrate wicked witches, goblins and ghosts but rather a day to honor loved ones who have transitioned from this physical reality in to spirit; a day of remembrance to remind me to take things less seriously, to have more fun and most importantly to spend more time connecting with family, friends and community. Whether you will be dressing up in costume, handing out candy, taking children to trick or treat, attending a party or throwing one, enjoying a night of entertainment be it food, art, music or theater, indulging in a creative endeavor or simply taking it easy at home, may this Halloween be a day to delight in the gift of life and to relish the memories of your beloved deceased.
If you carve a Jack O’ Lantern this Halloween, may it be whimsical and may you and others enjoy the seeds of your creation (literally and figuratively); roasted or dehydrated pumpkin seeds are the tastiest of treats. You might even spice yours up. Some creative spice ideas: if you like it a bit sweet, you might enjoy a little cinnamon or perhaps some pumpkin pie spice with agave syrup or if you like it a little exotic, perhaps a tad of paprika, cumin, or rosemary, or for an Indian flare try a mix of garam masala (curry), ginger, garlic and turmeric or perhaps chipotle or cajun spice for those that like it a little hot. Let your imagination go; the possibilities are endless.
Pumpkin seeds are a great source of protein and omega-3 essential fatty acids,
are high in fiber, full of vitamin E and rich in minerals including copper, manganese,

Two ways to prepare your seeds – dehydrated or roasted.
If you are not carving it, pumpkin squash is a staple ingredient
in many savory delights; stay tuned through the holiday season for more holiday recipes.
