Ingredients:
1 large jicama chopped in to ¼” to ½” chunks.
2 large ripe organic tomatoes chopped
1 corn off the cob
¼ red onion diced (optional)
1 yellow or orange bell pepper – chopped
1 stalk celery thinly diced
Juice of 1 lime
Juice of ½ orange
1 large bunch of cilantro diced
2 Mexican oregano leaves diced
3” diced green onion (optional)
For extra flare of tangy spicy deliciousness, add
1 small diced mango (optional) and/or
1/2 diced small avocado (optional) and/or
¼ t kelp granules (optional) and/or
1 diced de-seeded jalapeno (optional) – may substitute chiptolte or chile powder seasoning to taste
Preparation:
Mix all together. Chill. Serve as is or over bed of tender baby greens.
