Delectable Brussels Sprout Delights
These easy to make healthy tantalizing appetizers are among my favorite treats. I love the simplicity of this recipe and contrary to popular thought, I found Brussels sprouts to be extremely amiable to dehydration. Brittle, crispy, delicious.
Organic Ingredients for Sprouts:
2 – 3 lbs of fresh Brussels sprouts
1/2 lime
Dash of fresh ground sea salt
Cayenne or other desire seasoning
Dipping Sauce Ingredients (organic):
Spicy Tahini:
2 T raw organic sesame tahini
1/2 lemon
Two whole garlic cloves – peeled
Purified water
Cayenne or paprika as a finishing touch
Peppered Mustard:
Fresh stone ground brown mustard seeds
1 t. raw tahini
1/2 t to 1 t raw apple cider vinegar
Fresh ground black pepper to taste
Fresh ground sea salt to taste
Purified water
Fresh ground pepper as a finishing touch
Instructions:
For Sprouts:
Rinse Brussels sprouts thoroughly.
Cut off the stalks.
Slice lengthwise down the middle.
Rinse again in a colander.
Place on a tray to dry in between layers of paper towels.
Once dry, place on Paraflex sheets.
Squeeze fresh lime lightly over sprouts.
Sprinkle with desired seasoning or cayenne and fresh ground sea salt.
Place in dehydrator at 115 degrees F. (Never heat above 115 degrees F to preserve protein value and enzyme activity.) Check after four to five hours. Flip when getting crispy. Continue dehydrating another four to five hours or until crispy.
Best served warm. Let cool if you need to store them. They will store for up to one month in an airtight container. You can re-crisp them by placing them back in the dehydrator for an additional 30 – 60 minutes.
For Dipping Sauces:
For Spicy Tahini, place all ingredients in a food processor except the water.
Chop or grind on high and slowly add water until desired consistency.
Pour in serving dish and add a dusting of cayenne or paprika.
For Peppered Mustard, place all ingredients in a food processor except the water.
Chop or grind on high on high speed and slowly add water until desired consistency.
Pour in serving dish and dust with fresh ground pepper.
(If you prefer not to make it from scratch, you can use an organic mustard and add tahini, pepper and water.)
Optional:
Adorn with fresh chopped green onion.
Serve with chopsticks or enjoy as a finger food.
