Two medium sized ripe peeled and sliced bananas – 1/2′ – 1″ rounds
One teaspoon fair trade organic vanilla powder (or more to taste)
Two ripe organic strawberries (washed)
The riper the bananas, the sweeter the dessert and the stronger the banana flavor. I prefer moderately ripe bananas (yellow with minimal spots) so the vanilla takes precedence.
Place bananas in the freezer for at least 24 hours. Place frozen banana chunks in food processor, a Champion Juicer or blender (VitaMixer or BlendTec will handle frozen ingredients with no added liquid and will yield a smooth texture). Add fresh vanilla powder to taste and one ripe strawberry. (If you prefer a stronger strawberry flavor, simply add more berries however I recommend freezing them in advance if adding more than one). Blend until creamy. (If using a blender, use the tapper to be sure the blades blend the fruit evenly.) Once blended, it will be immediately ready to enjoy with a soft serve texture. If you prefer it firmer, freeze the entire mixture for two hours, then scoop up your nice cream. Add a whole or sliced fresh ripe strawberry as a garnish. (I like to leave the greens on the strawberries for added nutritional benefits.) You might add a mint leaf for a pretty garnish if you do not like the strawberry greens.
Serves one – simply double the ingredients for two, triple for three, etc.
