Sweet Spicy Crispy Onion Rings

Ingredients (all raw organic):
6 large sweet onions – peeled and cut into ¼” rings
Marinade:
1/8 cup fresh lemon juice
3 1/3 cup fresh orange juice
¼ cup brown raw sesame seeds
1/8 cup golden flax seeds
1 pitted date
1/4 cup low sodium tamari
Topping (optional):
Fresh red cayenne powder (optional). Old cayenne pepper will be dark in color, almost brown and will not have any heat.
Fresh ground sea salt (optional) Fresh ground has minerals that table salt does not.
Preparation:
Prepare onions by hand. Cut away outer layers of dead skin. Slice in to 1/4″ rings.
Pour purified water over top and let soak for two – three hours. Rinse thoroughly. Set aside. Rinse again before mixing with sauce. Pad-dry with paper towels or organic cotton towels.
Mix all ingredients for the marinade together in VitaMixer or other high speed blender. It will thicken.
Pour over prepared onion rings. Mix by hand. Let marinate for 30 minutes.
Place on ParaFlexx sheets on dehydrator trays. Onion rings will stick together. Separate out as best you can. You may need up to 8 Paraflexx sheets and dehydrator trays.
Lightly dust with cayenne powder and/or fresh ground sea salt (optional)
Place In dehydrator at 115 degrees for 6 – 8 hours. Flip and continue dehydrating another 12 – 18 hours. The amount of time it takes depends on many factors, namely the type of dehydrator, the humidity in the air, the circulation between the dehydrator trays, etc. They are done when they are no longer chewy but are crispy.
Enjoy warm or let cool. Great as a garnish or as a snack. Cool thoroughly before storing. Will last in refrigerator in air tight containers for up to one month.
