Raw Carrot Soup

Ingredients:
1 lb. carrots
1/2 tsp. coriander eeed
6-8 ounces water
Ginger (to taste)
1 squeeze of lemon
8 fresh macadamia nuts
1/4 small onion or chives (optional):
Put everything in a Vitamix blender and blend until the contents are warm for about one minute. Pour in to bowl. Garnish with chopped macadamias or with chives. This warm and nourishing soup is sure to please most every palate. Enjoy!!
