A huge fan of salsa fresca or pico de gallo, I am even a bigger fan of homemade gaspacho. Here is my easy to make recipe, a wonderful precursor to any meal or a great meal in and of itself. The best gaspacho begins with sun ripened organic fresh-off-the-vine tomatoes.
Organic Ingredients:
6 large ripe tomatoes – 4 quartered and 2 chopped (set aside the chopped tomatoes)
1 large bunch fresh cilantro – rinsed and chopped
2 peeled fresh garlic cloves
1/2 de-seeded fresh jalapeno
1/2 whole lime
1/4 diced red onion (set aside)
4 baby cucumber -rinsed and diced (set aside)
2 stalks of finely chopped celery (set aside)
Directions:
Please 4 quartered tomatoes with cilantro, garlic, jalapeno and lime in a high speed blender like a Vitamix.
Gently pulse off and on until all ingredients are well mixed but not pureed.
Pour mixture into serving bowl.
Stir in chopped tomatoes, diced onion, cucumber and celery.
Enjoy!
Yields: 1 serving
Tips:
For a tropical flare, add diced fresh papaya, pineapple or mango.
For extra spice, add a dash of cayenne.
