Fast Fresh Fun Food
While this is one of the most simple treats to make, it is a delightfully delicious way to nourish your body and mind. There is nothing like waking up to a refreshing, satisfying and energizing meal to get the day off to a great start.
Chia seeds are especially high in the good omega three fats which boost brain function, helping one to focus and concentrate. Great for digestion, chia seeds have an impressive nutritional profile, are high in fiber, protein rich, full of minerals and are packed full of important cancer fighting anti-oxidants. Beneficial for bone health, chia seeds are high in alpha-linolenic acid, calcium, phosphorus and magnesium. According to Healthline, chia seeds may improve bone density while supporting weight loss, are heart healthy and may help with blood sugar regulation. Chia seeds are great for the skin too and the physically active may experience a natural lift to endurance.

Ingredients:
1/2 – 1 cup of raw chia seeds
1 cup – 2 cups purified filtered water (2 parts water to 1 part chia seeds)
Fruit of your choice
Lots of love
Directions:
Pour the chia seeds into a container that can be sealed.
Cover with purified filtered water.
Seal the container shut.
Place in refrigerator.
Let soak until thick (a minimum of two hours or overnight).
Add more water to desired consistency.
When ready to eat, slice up your favorite fruit and mix with soaked chia jello.
Place in a serving bowl.
Add sliced fresh fruit on top.

Chia seeds are a versatile food and easy to incorporate into most any meal. I also add them to smoothies and crackers or prepare them as a milk. They make a great topping for cereal, hot or cold and for those that bake, they make an excellent egg substitution, thickening or moistening agent. I recommend enjoying chia seeds at breakfast or lunch rather than at dinner or as a dessert.
