Egg Fruit Banilla Smoothie
For those that live in the tropics, this is a treat too good to pass up.
Egg fruit is an exotic fruit and like many other fruits, there are a number of varieties. While I have not seen egg fruit at the super market, they are more common at farmers markets and are in season in the spring. The color of yellow egg yolks, it can be fickle; if its not ripe or too ripe, it can smell and taste like rotten eggs but if it is just right, it smells and tastes like cake icing in flavor and consistency, a mouth watering delight.
Gifted an egg fruit by a dear friend last week, I prepared a dessert smoothie that was better than a cupcake in a glass. Sustained all day long by this nutrient rich deliciousness, my taste buds and my inner child were dancing with every swallow. Too good not to share.
Ingredients (all organic when available):
1 large ripe egg fruit
10 ripe bananas
2 chopped celery sticks (optional – I like to include to help maintain the sodium/potassium balance)
2 teaspoons vanilla powder
water to desired consistency
ice cubes
Preparation:
Blend in a high speed VitaMix blender until smooth. Pour and serve. IN JOY!
