Packed full of nutrients, this yummy pumpkin soup is easy to make.
Ingredients:
2 cups pumpkin chopped peeled pumpkin chunks
1 organic heirloom carrot
1 stick of chopped organic celery
2 small de-seeded colored sweet peppers (optional)
1 bunch of organic cilantro
1 ripe de-seeded avocado
1″ fresh tumeric root
1/2″ fresh peeled ginger root
1 cup purified or filtered water
Seasonings – optional – any below or combination thereof:
1/4 teaspoon sea salt
1/4 teaspoon fresh ground black pepper
1/8 teaspoon cayenne
1/8 teaspoon sage
1/2 teaspoon ground coriander
1/2 teaspoon cumin
1/2 – 1 teaspoon garam masala (curry powder) to taste
Directions:
Yields: 2 – 4 servings depending on size of bowls
