Red-fleshed Pitaya (Dragon Fruit)
This easy to make pink drink is refreshingly simple and a guaranteed party favorite. Also known as pitaya, the purple red flesh is the perfect choice if you want to make a splash. There are three varieties: two have pink skin, one with red flesh and one with white, while another variety is yellow skinned with white flesh. While white fleshed dragon fruit is equally refreshing and pleasantly sweet, it lacks the same dramatic impression of the red fleshed variety when blended.
Ingredients:
2 – 3 large ripe red fleshed dragon fruit
Lime slices – kefir lime preferred
4 ice cubes (for desired temperature and consistency)
Directions:
Chill dragon fruit in refrigerator.
Cut dragon fruit in half.
Scoop fruit flesh out of skin in to VitaMixer.
Discard skin.
Blend until smooth.
Add ice as needed to keep temperature cool.
Pour in to glasses.
Garnish with lime slice.
