Raw Chocolate Pistacio and Chocolate Pecan Cookies
I cherish this time of year. Sharing holiday treats and festivities with friends and family always make it special. These live cookies are a wonderful holiday treat, guaranteed to bring a smile. Who knew cookies could be healthy and taste so good?
Ingredients (use organic wherever possible):
8 – 12 ripe peeled bananas
5 – 6 pitted dates
2 -3 heaping scoops of cacao powder
1 T. of soaked chia seeds (cover with purified water and soaked for 10 – 15 minutes)
1/2 – 1 cup chopped nuts (your preference)
Directions:
Fill a high speed blender to the rim with ripe bananas ( I like to mix up the variety)
Add all other ingredients. minus the nuts.
Blend on high speed.
Dollop on to paraflexx sheets, a dozen to a sheet. Space evenly. Shape with a flat spatula.
Sprinkle chopped nuts on top and gently press in to cookies.
Place in a dehydrator at 115 degrees for 6 – 12 hours depending on thickness and humidity as well as your preference – soft, chewy or crisp. Check every couple of hours. Flip when they no longer stick to the paraflexx sheets.
Continue drying to desired consistency.
Best served warm (may be rewarmed with only a few minutes in dehydrator).
Store between wax paper in sealed container in refrigerator for 2 – 3 weeks.
Yields 3 1/2 dozen cookies.
