I love these, a favorite especially around the holidays to enjoy with soups or dips or as is and special any time of year. These taste amazing and last up to a month (not in my house). These are a go to party favorite, guaranteed to disappear from the table. With a rich full onion flavor, these will please any onion lovers palate.
Necessary Tools:
Food Dehydrator (ideally Excalibur)
Food Processor or Mandoline
Ingredients:
1 large red onion – thinly sliced 1 1/2 cups
1 large sweet or Maui onion – thinly sliced 1 1/2 cups
1 cup golden raw flax seeds
1/2 cup brown raw flax seeds
1/16 cup raw pumpkin seeds
1/16 cup raw sunflower seeds
1/4 cup reduced sodium tamari
garlic powder to taste
fresh cracked black pepper to taste
2 cups filtered water

Other Notes and Dehydrating Tips:
Keep in mind in a humid climate, too long of a long dry time may result in molding – in that case, I exercise the quick dry technique which is to heat the dehydrator to 145° F for the first two hours and then reduce the temperature to 115° F for the remaining time. While the air temperature within the dehydrator will reach 145° F, the food temperature will not exceed 115° F. You can read more on this phenomenon in your Excalibur manual. This is very helpful to prevent mold and it can decrease drying time by 30% or more.
If the crackers lose their crispness or become stale during storage, you can re-crisp them by placing them back in the dehydrator for another couple of hours.
Some one asked me if these can be made in an oven. While I have never tried, I would imagine the answer is ‘yes’ however ovens typically do not have a temperature setting that is low enough to prevent the degradation of nutrients and enzyme activity (that naturally declines with cooking). If you choose this option, they will likely still be delicious, however not so nutritious as they will no longer be alive. In this event, you will want to watch them very carefully to avoid burning. Time will likely be reduced dramatically.
